Deep Application of Variable Temperature and Pressure Puffing Technology in Apple Chips Processing
Variable temperature and pressure puffing technology is a food processing method that combines the principles of vacuum, pressure, and temperature changes. Its application in apple chips processing is gradually deepening. This technology processes apple chips through three stages:
1. Vacuum Low-Temperature Dehydration Stage: Apple slices are dehydrated under vacuum at relatively low temperatures, effectively preserving the fruit's color, nutrients, and flavor while preventing browning and nutrient loss caused by high temperatures.
2. Variable Pressure Heating and Puffing Stage: Rapid pressurization causes the moisture inside the apple slices to vaporize and expand, forming a loose and porous structure, laying the foundation for subsequent puffing.
3. Negative Pressure Drying and Shaping Stage: Apple slices are dried at low temperature under negative pressure, securing their shape and achieving a crispy texture while retaining nutrients to the greatest extent.
At a deeper application level, this technology addresses the high oil content problem of traditional frying processes, achieving an apple chip oil content of less than 2%. Additionally, by controlling the temperature (40-70°C), it protects heat-sensitive vitamins and natural colors. Moreover, the technology is adaptable to different apple varieties and significantly improves production capacity through automated control.
