Water Immersion Retort

A: Retort means any closed vessel or other equipment used for the thermal processing of foods. Typically the sterilization temperatures vary from 110 to 135°C.

Q: How do you calibrate a retort?

A: Obtain a thermometer capable of 1200°F (516°C) (#154-25) and position the sensing probe inside the retort adapter block when the retort is turned fully on. 3. Let temperature stabalize. The temperature should read in the range of 930°F ± 70°F (498°C ± 21°C).
