Shake type autoclave is an oscillating motion sterilizer that enables products to move in a back-and-forth reciprocating motion, thereby accelerating the heat transfer inside the package, reducing the heating and heat penetration time, and improving the taste of the food product. Apart from its ability to provide uniformed heating effect, the oscillating sterilizer also performs horizontal reciprocating agitation to evenly mix food products.
The Shake type autoclave is more suitable for high-viscosity foods or semisolid foods (liquid containing soft particles) packaged in bottles, boxes and pouches/bags
Shaking frequency can be selected.The shaking method also can be forward and backward, or left and right.Preheated water and direct-steam humidification are used to reduce the heating up phase(could be customized). The cycle time is reduced 5 to 10 times by using high frequency shaking. This is resulting in radical changes of the heat transfer coefficient from the product.There is no overcooking, no loss of texture of the product. You get a coloured, high-quality product, which does not disintegrate and with an incomparable flavour due to the reduction in the cycle time. A significant difference compared to static or rotary retort.
